Meet Chef Elias

Every resort and conference center has a chef, but the Franciscan Renewal Center has the privilege and pleasure of featuring Chef Elias as the head of our kitchen. His extraordinary talents surprise and delight the many conference goers visiting here each year.

Chef Elias was born in Mexico City in 1960. He lived and studied there most of his young adult life. In 1978, he attended Culinary Arts School in Politecnico National where he studied world-class recipes for two years. Taking his love of the art to the United States, he performed his expertise in several hotel restaurants and specialty bakeries in California, Nevada, Colorado and Hawaii before settling here in Arizona.

He began his tenure as Head Chef at Franciscan Renewal Center in 2008. He has celebrated his homemade recipes with many of our past groups and guests, and with no surprise, has been requested to prepare many of his “secret recipes” for them. His favorite homemade recipe to prepare without a doubt is his Mexican Lamb Barbeque with Consommé — a Casa favorite as well.

Chef shared his most memorable moment: “After three years of cooking here at The Casa, I wanted to make a superb marinara sauce for an Italian Group staying with us. Much to my surprise, Gerry Ferraro, a member, asked me for the recipe. What a compliment.”
